
Beetroot & Rocket Salad
A tarty bite with fragrant greens.
Ingredients
- 1 Whole Beetroot – Shredded
- 3 Cups Rocket Leaves
- 1 Cup Danish Feta
- 1 tsp Dried Oregano Leaves
- ⅓ Cup Pine Nuts – Toasted
- Olive Oil – To Taste
- Salt & Pepper – To Taste
Instructions
- In a bowl, combine rocket and beetroot. Juice your lemon, add olive oil, salt and pepper and the oregano leaves.
- Dress the salad, top with the crumbed feta and toasted pine nuts.
