Beetroot & Rocket Salad

A tarty bite with fragrant greens.

  • 1 Whole Beetroot (- Shredded)
  • 3 Cups Rocket Leaves
  • 1 Cup Danish Feta
  • 1 tsp Dried Oregano Leaves
  • ⅓ Cup Pine Nuts (- Toasted)
  • Olive Oil (- To Taste)
  • Salt & Pepper (- To Taste)
  1. In a bowl, combine rocket and beetroot. Juice your lemon, add olive oil, salt and pepper and the oregano leaves.

  2. Dress the salad, top with the crumbed feta and toasted pine nuts.
