• 600ml thickened cream
  • 1/2 milk
  • 3 sprigs fresh thyme
  • 1/2 Tsp Nutmeg
  • Salt & pepper
  • 1 Tbsp traditional gravy powder
  • 1 onion diced
  • 3 garlic cloves crushed
  • 2 Tbsp plain flour
  • 1kg brushed potatoes sliced
  • Parmesan cheese
  • Tasty cheese 
  • Unsalted butter
  • Olive oil

  1. Heat 2 Tbsp olive oil & butter in a skillet.
  2. Sauté onions till fragrant and soft.
  3. Add the Garlic and fresh sprigs of thyme. Sauté for a few minutes. 
  4. Sprinkle the plain flour and stir well, this will help thicken the sauce. 
  5. Pour thickened cream and milk. Whisk in the gravy powder, nutmeg & season. Allow to come to a slow boil.
  6. Turn off the heart sprinkle in both cheese and stir.
  7. In a baking dish, butter the bottom or spray with cooking spray. 
  8. Start assembling with a layer of potatoes then sauce and repeat these steps until the sauce is finished. 
  9. Top layer of sauce and sprinkle some cheese. 
  10. Place into preheated oven for approx 45-1hr or until potatoes have cooked through.
