Lamb Marinade:
- 1kg Lamb Forequarter
- Chopped fresh parsley
- 1/4 cup Worcestershire sauce
- 1/4 cup soy sauce
- 3 Tbsp Honey
- 1 Tbsp Sugar
- 2 Tsp wholegrain Mustard
Thyme & Pepper Gravy:
- 1 small diced onion
- 1 cup mushrooms sliced
- 2 cloves garlic crushed
- 3 Tbsp pepper gravy powder
- 1 Tbsp traditional gravy powder
- 1 Tbsp thyme
- 1 Tbsp Rosemary
- 200ml thickened cream
- Mix the ingredients for the lamb marinade in a bowl. Place the lamb into the bowl & coat with the marinade well. Cover the bowl and place into the fridge atleast 30mins before cooking.
- Prepare preferred vegetables and place into a baking dish.
- Heat a little butter and oil in a skillet and sear the lamb approx 2mins each side. Place into the baking dish with the vegetables.
- Cover the dish and place into the oven for approx 25-30mins.
- During this time prepare the gravy. In a pot heat a little oil and sauté the onions, garlic & mushrooms. Once they’ve softened pour over the dissolved gravy powder mix and stir. Add the thickened cream, thyme & Rosemary and mix well till thickened.
- Remove dish from the oven and pour over the gravy mix. Cover and place back into the oven for another 15-20mins or until cooked & tender.
