- 1.5 Litres Vegetable stock
- 1 cup egg noodles
- 1 cup ‘McEnZie brand’ Italian style soup mix
- 1 Heap Tbsp tomato paste
- 1 large onion diced
- 2 carrots diced
- 1/2 Leek thinly sliced
- 1 celery stalk sliced
- 2 potatoes diced
- 1 Tsp dried parsley
- 3 Garlic clover crushed
- Fresh parsley chopped
- Beef rashers crisped in the oven (optional)
- In a small saucepan add the cup of soup mix with 3 cups water and allow to cook and come to a boil until mix has softened.
- In a pot heat a little oil and add all the prepped veggies with the garlic and fry off until veggies have slightly softened.
- Add in the egg noodles and tomato paste mix really well.
- Pour over the stock. Sprinkle in the dried parsley and salt + pepper.
- Allow to simmer for approx 15-20mins if you would like the consistency to be thinner then pour over some more water.
- Sprinkle in fresh parsley. Once mix and veggies are completely cooked, ladle into soup bowls, top with the crispy beef rashers & serve with a side of crusty bread for a warm and hearty Autumn + Winter dish.
