🍴Lamb • Shanks🍴
Ingredients (serves 4)
🍛x4 lamb shanks (frenched)
🍛x2cans diced tomatoes
🍛x1 jar passata
🍛3tbsp tomato paste
🍛x1 can chick peas (rinsed)
🍛x1 can baby carrots (rinsed)
🍛x1 onion (diced)
🍛x4 garlic (crushed)
🍛x2 chicken stock cubes (dissolved)
🍛salt & pepper
1.) In a oven proof skillet heat some olive oil and add your shanks only to seat around the fat & outside. Approx 3-4minutes each side. Once done set them aside.
2.) in the same skillet heat a little more olive oil add your diced onion, garlic & fresh herbs and saute for a few minutes. Further add the chick peas & carrots.
3.) stir and once the gorgeous aroma of the garlic is lingering add the tomato paste ensuring once storing your coated the whole mix.
4.) add the cans of diced tomatoes & passata jar, aswell as your dissolved chicken stock. Bring to a slow boil
5.) add your dried herbs and season with salt & pepper.
6.) cover tighter and place into the oven for approx 4 hours or once meat is falling off the bone.
