Sumac & Zataar, two ingredients that are an essential part of the Lebanese Cuisine.
So why not combine them both together…
Ingredients:
- 1 Kg Chicken pieces (of your choice)
- 1 Tbsp Sumac
- 1 Tbsp Zataar
- 1 Tbsp Arab 7 spice
- 1 Tbsp paprika
- Salt & pepper
- Lemon wedges/slices
- 3 cloves garlic (minced)
- Olive oil
- Spanish onion (sliced)
- Toasted Nuts (Pine nuts,almonds)
Method:
- In a bowl marinate chicken with the all above spices,oil & lemon.
- Cover the bowl and refrigerate for a minimum of 1 hour.
- Once marinated well, place the chicken in a oven proof dish and cook covered for approx 30mins and uncovered for a further 8-10mins.
- Once cooked serve & garnish with parsley leaves and toasted nuts.
- 3 Capsicums (Halved)
- 1.5 cups Basmati rice(washed)
- 1 can diced tomatoes
- 1 onion diced
- Tumeric
- Salt & pepper
- 3 cups chicken stock
- Shredded cheese (Parmesan, tasty or both)
Method:
- In a pot heat a little oil and sautè off the diced onions till fragrant & translucent.
- Add the can of diced tomatoes, along with the pre-washed rice. Stir and season with salt, pepper & Tumeric.
- Slowly pour in the stock while stiring the rice. Allow to simmer and bring up to a boil.
- Lower heat and cover pot for approx 10mins or till rice has cooked.
- In the meantime, prep your capsicum in a oven proof dish.
- Atuff the capsicums with the cooked rice, top with cheese and sprinkle Zataar.
- Place in the pre-heated oven for approx 15-17mins.
